Stuffed Jalapeno Poppers

                        Stuffed Jalapeno Poppers
* 25 Jalapeno's washed & seeds removed < be sure to wear gloves while handling jalapeno's>
* 1 8oz. Package Cream Cheese
* 1/2 c Shredded Cheddar Cheese
* 1 Chicken Breast, cooked and shredded
* 1/2 tsp Garlic Powder * 1/2 tsp salt
* 1 1/2c Flour, seasoned with 1/2 tsp Salt
* 1 Egg, beaten
* 6c Canola Oil, for frying
* Step 1~ Wearing gloves wash jalapeno's & remove all seeds. Then boil in hot water for 5 minutes, remove and drain well.
* Step 2~ In a large mixing bowl add, shredded chicken, cheeses & garlic powder. Mix together well, then carefully fill jalapeno's with filling.
*Step 3~ Next take your stuffed jalapeno's and carefully dip then in the egg, then in the seasoned flour, then cook them in your fryer for 3-4 minutes until golden. You will notice they start to float when they are done. Take them out of the fryer & drain the grease on paper towel before serving.

I love this idea for keeping all your take out menus organized.  We used to do this for all the rooms at the resort we managed.  It makes it so much easier to keep them together & to flip through the menu's to place an order.  I also use one page to keep any coupons we receive.  

Super easy to assemble, you probably already have the supplies laying around your house. I used  1, 1/2 inch 3 ring binder  & clear page protector sheets.

Sliders & Avocado Fries

                    I Made these for Dinner last night and the
                        family completely inhaled them !!!
                                  Sliders & Avocado Fries
* Lean Ground Beef or Turkey, made into medium sized meatball   
   and pressed into a mini burger.
* small onion, sliced thin
*1 package of Dinner Rolls
*Olive oil
*Cheese slices, Onions or French's Onion Rings, Jalapeno & any  
  other toppings you desire.
*Avocado Fries~
*sliced avocado, seasoned with salt & pepper, garlic powder,   
  paprika, egg, flour, panko bread crumbs, parmesan cheese.
*Season your avocado slices, then dip in egg, then flour, then panko bread crumbs mixed with parmesan cheese. place on baking sheet and bake on 350 for 20 minutes.

Holy Cow Butter Finger Cake

                         Holy Cow !! Butter Finger Cake

Can you say YUMM !!!  this cake makes me wanna lick my plate, Seriously !!

Chocolate Cake, Peanut Butter Icing, with Butter Finger Crumb topping, HOLY COW !!

*Step 1 ~ Bake Chocolate Cakes according to package directions, set aside & cool...I used an 8inch cake pan and my favorite chocolate cake recipe from the back of the Hershey's unsweetened cocoa box., ahhmazing !!

*Step 2~ Make Peanut Butter Icing <recipe below>  next, crush Butter Finger candy bars in the food processor until they are crumbled.

*Step 3~  Once the Cake has cooled, place on Cake plate. Icing the first layer of your cake, then add some butter finger crumbs on top of icing. Next add the top cake layer and finish icing your cake & place your butter finger crumbs on top layer. Next, I used wilton tip #21 to decorate the bottom & top borders. 

Peanut Butter Icing
*1 stick of butter, softened
*1c of creamy Peanut Butter
*1tsp of vanilla
*6 c 10x powdered sugar

*Cream the butters together with your mixer until blended well.. add the vanilla and 1 c of sugar at a time until icing is smooth & creamy.

Puppy & Kitty Cup Cakes

Puppy & Kitty Birthday Cup Cakes Kids & Parents go CRAZY over !!!

Step 1~ Bake cupcakes & mini cupcakes according to the package of cake mix. Let cool & set aside to decorate. note <1 lg & 1 sm cupcake for each puppy or kitty>
Step 2~ Make Icing <recipe below> & separate into small bowls. Add food coloring to the desire of your preference, and mix well. Then place in pastry bag & use your decorating tips < I used wilton tips #'s 5,12, 21 & 2010 >
Step 3~ Now this is the FUN part !!! Decorating & assembing your puppy & kitty cupcakes. First decide what look your going for each cupcake. I used tips # 21 & 2010 to decorate & icing the large and small cupcakes..trying to make it look like a furry puppy or kitty, lol.. * Next use the small cupcakes to make  your animals faces. I used tip # 12 to make the nose and ears. Then I used # 5 to make the eyes, tongue and insides of ears. 
Step 4~ Take your small cupcake, and place it in the center of the large cupcake on it's side. making sure it's face is in the right position . If you decide to make the poodle, this is a good time to add the marshmallows.
Butter Cream Icing Recipe
*1 stick of butter, softened
*1 c of shortening
*1 tsp vanilla
*4 c of powdered10x sugar
* Cream together the butter & shortening with your mixer. Next add your vanilla & then slowly add 1c of sugar at a time, until blended well. Stopping and scraping the sides of your mixing bowl as needed, to make sure the icing is smooth & creamy.
Decorating Tips ~ I love to get creative when decorating my baked goods.. I try to use all different kinds of candies or cookies some of these would include, m&m's, choc chips, gum drops, life savers, red hots, licorice, pretzels, marshmallows, crushed candy bars, gummy bears, fresh berries, nuts ect.. the ideas are endless, the most important part is just having FUN !! 
<side note: Anytime I need black icing, I always buy wilton's tube of black icing.. its just easier and cheaper for only $3. other wise I would end up using my whole jar of black food color..plus time and supplies, it just makes sense.>

This Birthday Cake is so Impressive your friends & family will be amazed !! Not only at how spectacular it looks but it's equally delicious, hence the name "To die for Chocolate Cake"..But don't be intimated to make it, I'm gonna break it down barney style... it's a lot easier to bake & assemble than it looks.. I promise !!
To Die for Chocolate Birthday Cake~
* Chocolate Cake Recipe on the back of the Hershey's Unsweetened Cocoa Box <super ahhmazing !!> plus add 1 bag of milk chocolate chips to the cake batter, bake in a bunt cake pan according to directions, 350* for approx 35-40 mins. next, let cool ..when cool, place on your cake plate and get ready to add icing..
* in a small sauce pan melt 1 stick of butter, add 1 bag of milk chocolate chips & 1 tsp vanilla and stir until melted and has a smooth consistency. then pour evenly over your chocolate bunt cake. 
*For Cookies~
I make my cookies the day before, so that assembling the cake is easier. I also us a short bread cookie recipe, because they are a delicious cookie that is solid enough to hold the cookie on a stick without breaking and falling apart.
*Short Bread Cookie Recipe~
*1 stick of butter, softened
*1c of shortening
*1/2 c brown sugar
*1/2 sugar
* 2c of all purpose flour
*1 tsp salt
*Directions~ Beat butter, shortening & sugar in mixer on medium speed. Add the flour & salt. Dough will be crumbly, use hand to form dough ball, and turn out onto floured surface and roll out to a large rectangle that is 1/2 inch thick. Cut into cookie shapes as desired and place on a lightly greased baking sheet 2 inches apart and carefully insert lollipop sticks in bottom of cookie. Bake on 300* for 25 minutes until done. Let cool before carefully moving. Then use Royal Icing and food coloring to decorate as desired. 
*Royal Icing~ In small bowl combine 2 cups confectioners sugar, 1 to 2 tablespoons milk or water and 1/2 teaspoon vanilla extract. Stir until smooth. place in separate small bowls and add food coloring, then place in pastry bag with tip for decorating . let dry for a few hours before placing in or on top of cake. 
And wah lah !! Now your "To Die for Birthday Cake" is done. And you will wow your crowd with fancy baking skills~

Cookie Pizza

* 1 pizza 14" box from your local pizzeria or sam's/costco clubs < I paid $1.00 per box>
* 2 tubes of Pillsbury refrigerated sugar cookie dough
* 1 15 oz. jar of strawberry or raspberry jam
* White Chocolate baking squares, shredded on your grater
* 1 box of strawberry fruit roll ups, cut into circles for the pepperoni
*Step 1 - Preheat your oven to the directions on your cookie dough package. Grease your pan with non stick spray and spread your cookie dough out onto the pan into the shape of pizza dough. Bake according to directions on the package. When done baking, let it cool. While your cookie is cooling, get your pizza box ready and place a medium size piece of wax paper in the center of your box. Make sure it is smaller than the size of your cookie.
*Step 2 - Once the cookie is completely cool, take your jam and spread in the center of the cookie to resemble pizza sauce. Then your going to sprinkle the shredded white chocolate on top of the jam, just like you would have if it was mozzarella cheese. Next your going to take your fruit roll ups, that are precut into circles and place them on top of the shredded white chocolate to mimic the pepperoni on a pepperoni pizza.
*Step 3 - Use a large spatula to carefully place in the center of your pizza box.
You did it !! Now you are ready to impress your family & friends with your Beautiful Cookie Pizza. Feel free to customize & embellish your cookie with other toppings that are you favorite. Have fun & get creative, the ideas are endless !!

Pin It For years I use to keep all my nail polish & nail supplies in a basket.  But it was messy & not so organized, and I would lose track of what colors of polish I had. So when I was reorganizing my kitchen cabinets, I ended up having a spice rack I wasn't using.  After trying to come up with a different way to use the spice rack , I had the idea of using it to organize my nail polish !! And let me tell you, I Love it !!!  It's a great way to store your polish, keeps everything organized and with just a lil spin you can see exactly what you !

Chicken Jalapeno Wraps

Chicken Jalapeno Wraps:

* 2 tubes of crescent rolls
* 1 8oz. package of cream cheese
* 1c shredded cheddar cheese
* jalapeno pepper chopped small <spicy to taste>
* 1 can chicken breast or 1 boiled chicken breast, shredded
* 1/2 tsp garlic powder

* in a small bowl combine cream cheese, garlic powder, jalapenos together and mix well.
next add your shredded chicken breast and mix together well.

* next take your crescent rolls and spread them out and then cut them in half. take your cream cheese filling and place a tbsp amount in the center of the crescent roll and fold the four corners, pinching together.  place on a baking sheet and bake on 350* for 20 minutes. Pin It

Super Easy Home Made Yogurt

Super Easy Home Made Yogurt, made in the Oven

*6 c milk, boiled for a minute then, cooled to 90-100*

*3 tbsp yogurt culture starter <I use cabot plain yogurt >

* large glass bowl or 6-8 1/2-1 pint canning jars

* In a medium sauce pan boil milk, then cool to 90-100*

* while the milk is cooling preheat your oven & glass bowl/jars on 200* for 15 minutes then TURN OFF the heat and keep the door closed to keep the heat inside. please be sure your heat is turned off or it will kill your culture.

* when the milk has cooled whisk in 3 tbsp on yogurt culture starter until well blended. Then pour into the warm bowl/jars and place in the oven with the door closed , heat turned OFF !!
<I use a baking pan to place my glass jars on for easier transferring> allow to rest in the oven for 4-24 hours until your yogurt has set up and gotten more solid. refrigerate for 8 hours before serving.

* also be sure to save some of your plain yogurt to use as the culture for your next batch.

* on a side note: I learned how to make yogurt from a Lebanese friend when I lived in Belize. at that time I had to use powdered milk and water to make the milk I used to make my yogurt. I definitely think powdered milk makes a thicker yogurt, and I often thick of buying another can to use for my yogurt batches. however I would really rather perfect my non dairy yogurt with coconut, rice & almond milk...
